'nastics

Avery officially started gymnastics today!
We had done a couple trial classes, but this was her first day of real class.
Every time I ask her if she wants to play, her reply now is " 'nastics?"

30 meals in 30 days {DAY 12}---breakfast

cinnamon rolls with cream cheese frosting ninety minute cinnamon rolls

this recipe was fairly easy,
and the results were definitely yummy!
even better when topped with
cream cheese frosting
{my absolute FAVORITE frosting}
I used a recipe I found on slashfood.com
and I have to share part of the post, just because it made me laugh out loud!
"Cream cheese frosting, you see, is the best frosting out there, and I have stumbled across the end-all, be-all recipe for it. Strangely enough, it's been under my nose this whole time in my trusty Joy of Cooking cookbook for years. I just never noticed it. At first I didn't trust it because it seemed way too easy compared to "fancier" recipes that make you think you need to be Ina Garten to make it, but this recipe is almost so easy, even Sandra Lee could make it. Ouch. Was that too harsh? See, that's how easy this recipe is."
Here's the recipe:
ingredients
8oz cold cream cheese
5Tbsp softened butter
2tsp vanilla
2-4C powdered sugar {I used 2 and thought it was plenty sweet}
Beat cold cream cheese (not rock solid, but it means you can use it straight out of the refrigerator) with softened butter and vanilla until combined.
Gradually add 2 c. powdered sugar that has been sifted after measuring.
Continue to add more sifted powdered sugar until you reach a consistency and sweetness that fits your taste.

This recipe was also Avery approved!

30 meals in 30 days {DAY 10}

polenta pizza so here is what I did with our leftover polenta!
Topped it with marinara sauce, mozzarella cheese, yellow tomatoes & turkey pepperoni.
Baked in the oven at 400 for 10 minutes
YUM!

30 meals in 30 days {DAY 9}

polenta with toppings
{topped with marinara, grape tomatoes & grated parmesan}

this idea actually came from my sister's wedding last year
she & her husband wanted to have something different and unique for the food at their reception...the took the idea of the mashed potato bar, and changed it up to be a polenta bar

they had hundreds of different toppings for everyone to choose from...

creative, unique & yummy!


Polenta is super easy to make!

This is another recipe that comes from

Basic Polenta

ingredients:

6C water

2tsp salt

1 3/4C yellow cornmeal

3 tbsp unsalted butter, cut into pieces {I actually use olive oil instead}


Bring water to boil in a large, heavy saucepan

Add the salt, then gradually whisk in cornmeal.

Reduce heat to low and cook, stirring often, until mixture thickens and the cornmeal is tender; about 15 minutes.

Remove from heat and stir in butter {or olive oil}.


Makes 6 side-dish servings.


*I served up what we were eating tonight, then spread the rest into a 9x13 glass dish and put in the refrigerator for tomorrow nights meal

30 meals in 30 days {DAY 7}

Turkey Meatloaf cupcakes
with mashed potatoes & roasted carrots I used another one of my favorite cookbooks
Ina Garten's
the barefoot contessa cookbook
Since Avery asked for cupcakes for breakfast the other morning, I thought maybe she would eat dinner if it looked like a cupcake...
so I halved the meatloaf recipe and scooped it into a muffin pan.
Then I topped the "cupcakes" with parmesan mashed potato frosting.
Avery was excited that we were having cupcakes for dinner...

...but not so happy once she took a bite!

a day in the life of Avery

Just a little glimpse into our life.
This is how our day started... Avery climbed up & sat in her grocery cart.
Yep, legs through and everything!
of course she did this for a reason...
so that she could reach her CD's & CD player!

Next up, she got the trash can out of our bathroom
{luckily it was trash day and had just been emptied!}
She brought it into the kitchen and set it on top of the dish towel...that I was using to clean up the water she had just spilled.
Then she just climbed right in...

Avery then found her kitties...
and another basket to climb in...

Wedged between the sofa and table
{with the kitties of course}
On to her tunnel...
and her favorite pink chairs...

she thought it was hilarious to make the kitties sit like people!

time for a yoga break...
down dog!
Then she found the laundry basket and decided to put it over her head...
after dumping all the laundry out in our bathroom!

doing a little walking with the basket on her head...why not!?
kisses for Bailey...

hmmm...maybe I should just climb in with the dogs!
{notice the kitties watching everything}
